Extraction Process

THE SUPREMACY OF COLD EXTRACTION

The vanilla bean has approximately 300 unique flavor components. However because many are delicate and occur only in trace amounts, they must be extracted carefully. At Lochhead Manufacturing Company we do not use super-heated liquids or pressure for our extractions. Instead we use our proprietary cold extraction, slow percolation method to produce all of our vanillas.

This process begins with specially designed chopping machines that do not produce any heat. Then the beans are transferred into our custom stainless steel “cool extractors” that operate 24 hours per day, 7 days per week. Damaging heat and pressure are never introduced into our process. This ensures the rich, deep flavor and delicate bouquet of each vanilla bean is passed on unchanged to our vanilla extracts. Our multi-stage cold extraction process takes almost one month to complete (as opposed to hours with the high heat method) but it results in truly superior vanillas.

All Vanillas are not created equal.

The finest vanillas in the world are produced by Lochhead Manufacturing. How can we make this claim? The beans… we know our beans and our farmers. To produce premium pure vanilla extracts it always begins with the beans. At Lochhead Manufacturing Company we source only premium quality sun-cured vanilla beans for our extracts. These beans take longer to grow and cost more than twice as much as low quality beans, but they produce the most wonderful vanilla imaginable. These beautiful beans are carefully inspected and categorized using our proprietary indexing system based on specific bean characteristics. Once they are grouped, experienced personnel blend the beans according to our formulation specifications to maximize the flavor, strength, and aromatic notes.
