Vanilla beans are grown in tropical climates, typically in regions 20 to 25 degrees from the equator. Around 80% of the world's vanilla beans are grown in Madagascar. However, you can also find beans grown in Indonesia, Tahiti, Mexico, Papua New Guinea, and Uganda.

Madagascar is part of an island chain known as the Bourbon Islands. So contrary to popular belief, no bourbon whiskey is used in the extraction of this vanilla. The word “bourbon” is simply a term used to identify the region where these vanilla beans are grown.

Much like fine wine, vanilla has different flavor profiles depending on where the beans are grown. Each vanilla bean region has unique characteristics that are highlighted in the flavor of its beans.

A vanilla bean or pod is the fruit produced by the vanilla orchid, Vanilla Planifolia. It is a long, skinny, green fruit that contains over 300 individual flavor components. It is used as a crucial flavor ingredient in many sweet and savory dishes found around the world.

The “fold” is the volume of beans used to produce that vanilla extract. Double-fold (2x) uses two times the amount of beans as single-fold (1x) and therefore has a stronger concentration of flavor per gallon.
